Ingredients
  

  • 3 Medium ripe bananas (The riper the better) About 1 1/4 cups 300g
  • 1/4 cup Avocado oil 54g
  • 2 tbsp Butter melted 28g
  • 3/4 cup Coconut sugar 135g
  • 2 Eggs
  • 1 tsp Vanilla extract
  • 1 1/3 cup Einkorn flour (All-purpose) 160g
  • 1/3 cup Rolled oats I like sprouted 35g
  • 1 tsp Cinnamon powder
  • 1/2 tbsp Baking powder 6g
  • 1/2 tsp Baking soda 3g
  • 1/2 tsp salt 3g
  • 2 tsp Nutritional yeast (optional, for added vitamins and minerals)

Instructions
 

  • Preheat oven & prep pan- Preheat oven to 375 degrees Fahrenheit. Line a standard 12-cup muffin tin with liners.
  • Combine dry ingredients- To a bowl add flour, oats, baking powder, baking soda, salt, cinnamon and nutritional yeast. Set aside.
  • Mash bananas- Using a stand mixer with the whisk attachment or hand mixer add in bananas and whisk until bananas are mashed up.
  • Add sugar & wet ingredients- Add in coconut sugar, avocado oil, melted butter, eggs and vanilla. Whisk until combined.
  • Combine wet an dry- Add in dry ingredients and mix until just combined. Do not over mix.
  • Bake- Fill muffin liners 3/4 full and bake in oven for 20 minutes or until a toothpick inserted comes out clean.
