Einkorn crescent rolls are a delicious soft buttery dinner rolls recipe that are perfect complement to any meal. They are made with organic all-purpose einkorn flour, milk, eggs, sugar, salt, butter, and yeast. The dough is rolled out into a circle, brushed with softened butter, and cut into pie-shaped pieces. Each piece is then rolled up into a crescent shape and then baked until golden brown. The result is a flaky and tender pastry roll that is perfect for any occasion.
Combine yeast, 1 tbsp sugar and warm water to a bowl and let dissolve. Allow to bubble and activate for about 5 minutes. You will notice the yeast will become foamy/bubbly.
In a separate bowl, whisk together warm milk and room temperature eggs.
Using a stand mixer with the dough hook attachment, add your yeast mixture, plus the remaining 1/4 cup of sugar and the whisked milk & eggs. Mix until combined.
Add 2 cups of flour to start off with. Slowly add 1/4 cup flour at a time until you reach 3.5 cups. Now add 1/2 cup of softened butter and mix until incorporated. Keep adding 1/4 cup flour until dough forms into ball. The dough should be sticky, but not stick to fingers.
Transfer dough onto lightly floured surface and knead for 1-2 minutes until the dough is soft and supple. (don't over knead the einkorn dough)
Lightly grease a bowl with oil and transfer dough into the bowl. Cover with saran wrap and dish towel. Allow to rise in a warm area of your kitchen until your dough has doubled. Roughly 2 hours for instant yeast, longer for regular.
Once doubled, punch down the dough. Split the dough into equal sized balls. Roll one dough ball out to about 15-16 inches in diameter. Brush the dough with 2 tbsp softened butter and cut into triangles. 12 total.
Roll each slice of dough from the outer triangle portion to the inner to form a crescent shape. Repeat this process with the other dough ball.
Lay rolls on parchment lined baking tray. Cover will a dish towel and allow to rise for about 1 hour or until they rise roughly 40-50%, do not allow the dough to double or over proof.
Bake in 350-degree oven for 15 minutes or until golden brown. Brush with melted butter if desired.
