Greek Chicken Gyros

Ingredients
  

Chicken Souvlaki Marinade

  • 1-1.5 lbs Boneless skinless chicken breast cut into 1 inch cubes
  • 2 tbsp Avocado oil
  • 2 tsp Fresh lemon juice (about half of a large lemon)
  • 1 tbsp Fresh dill finely chopped
  • 1 tsp Salt
  • 1 tsp Oregano dried
  • 1 tsp Parsley dried
  • 1 tsp Black Pepper
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Thyme dried

Tzatziki sauce

  • 1 cup Greek yogurt plain
  • 1 cup Grated cucumbers liquid squeezed out
  • 1 tsp Fresh minced garlic
  • 2 tsp Lemon juice
  • 1-2 tbsp Fresh dill finely chopped
  • 1 pinch Salt to taste

Toppings/Salad

  • 1 Cucumbers diced
  • 1 Tomatoes diced
  • 1/4 cup Feta crumbled
  • 1/2 Red onion sliced
  • 1 tbsp Fresh dill chopped

Gyros-store bought or see post for homemade einkorn flour tortillas/gyros.

Instructions
 

Einkorn Flour Tortilla

  • If making Homemade Einkorn Flour Tortillas, see notes for recipe.

Chicken Souvlaki Marinade

  • Dice chicken into one-inch cubes. Place chicken in large gallon sized bag or large bowl and add all marinade ingredients to bag/bowl. Toss chicken to coat and refrigerate for a minimum 15 minutes or overnight.
  • Once chicken is marinated, thread the chicken onto your skewers. Using a grill pan over medium high heat place skewers down turning every couple minutes allowing the chicken to cook completely and develop nice color and a slight char. This will take about 10-12 minutes. You can also skip the skewers and just pan sear the chicken.
  • Once chicken is cooked, remove from grill and allow chicken to rest for 5 minutes.

Tzatziki sauce

  • Take 1 large cucumber and grate it by hand until you have a little more than 1 cup. Squeeze out as much liquid as you can and place in a bowl.
  • To the bowl with cucumber add remaining Tzatziki sauce ingredients. Give it a stir, and place in refrigerator until ready to use.

Assemble Gyros

  • Grab your gyro and add warm chicken, cucumbers, red onion, tomato, feta, and dill. Slather with a healthy portion of fresh tzatziki wrap or fold your gyro and enjoy!
