  • Parchment paper

Ingredients
  

  • 1 cup Peanut butter Creamy (for paleo version substitute almond butter) room temperature
  • 3/4 cup Coconut sugar
  • 1 tsp Vanilla
  • 1 Egg
  • 1/4 cup Paleo Mix bobs redmill
  • 1 tsp Baking soda
  • 1 tsp Vanilla extract
  • 14 Hu gem chocolates or other large paleo chocolate chips

Instructions
 

  • Line baking sheet with parchment paper and preheat oven to 350 degrees Fahrenheit.
  • In large bowl whisk together softened room temperature peanut butter, coconut sugar, egg and vanilla extract.
  • Add paleo flour mix and baking soda. Mix until well combined.
  • Refrigerate dough for 1 hour.
  • Roll dough into 1 inch balls and place on cookie sheet 2-3 inches apart from each cookie. Insert hu gem chocolate into the middle of each ball pressing the chocolate down, slightly flattening out the cookie.
  • Bake at 350 degrees Fahrenheit for 10-12 min. Allow to cool for 30 minutes and enjoy!
