Maple Toffee Recipe (Easy Homemade Maple Candy Bits)

This easy maple toffee recipe is made with just two ingredients—butter and maple sugar—and transforms into something truly special. As it cooks, the mixture deepens into a rich, caramelized maple candy style toffee with a buttery finish and delicate crunch. It’s one of those simple, homemade treats that instantly elevates any dessert.
Prepare: Prepare a baking sheet by lining it with parchment paper. Have a thermometer ready before you begin.
Melt: In a medium saucepan over medium to low heat, melt the butter.
Add maple sugar: Once the butter is almost fully melted, add the 1 cup of packed maple sugar (175g), make sure you pack it down like brown sugar. Stir continuously until the sugar begins to dissolve and the mixture comes together.
Cook: Continue stirring constantly without stopping. If the mixture starts to get too hot or begins to smoke, immediately reduce the heat—you want a steady cook, not a burn. I usually toggle my burner between level 4–5 to keep the heat controlled and consistent.
Reach temperature: Keep stirring for about 3–5 minutes, until the temperature reaches 310°F. Candy typically sets between 300–310°F, but reaching 310°F is ideal for a firm, hard snap texture. Be careful not to exceed about 340°F, or the sugar will burn.
Pour: Once the correct temperature is reached, immediately remove the pot from the heat and pour the mixture onto the prepared parchment-lined baking sheet. Quickly use a spatula to spread it into an even layer, as it will begin to set fast and become difficult to move.
Cool: Allow the toffee to cool completely, then break it into pieces using your hands or a mallet.
