Using a food processor or blender, add all ingredients in and blend for 1 minute or until well combined.
Empty ingredients from food processor into large bowl and refrigerate for a minimum of 1 hour.
Pour into glass and serve with paleo graham crackers and fresh sliced bananas. The bananas in the pudding will begin to brown after 24-48 hours so it is advised if serving for a crowd to make the same day 2-3 hours in advance.
