Soft and Chewy Chai Spiced Cookies with Einkorn Flour

Imagine soft and chewy cookies made with nutty-flavored einkorn flour. A classic sugar cookie, sweet and simple. Now, imagine infusing it with the warm, cozy flavors of chai. A symphony of cinnamon, ginger, cloves, cardamom, and nutmeg. Result? A soft and chewy Chai spiced cookie that is out of this world!
Preheat Oven: Preheat oven to 350°F. Line a baking sheet with parchment paper.
Mix Dry Ingredients: In a bowl, whisk together flour, salt, baking soda, and spices. Set aside.
Cream Butter & Sugar: In a stand mixer, cream together butter and sugars until light and fluffy.
Add Eggs & Vanilla: Add eggs and vanilla extract, mixing until well combined.
Add Dry Ingredients: Add the flour mixture and mix until just combined. Do not overmix.
Scoop Dough: Using a large spring-loaded cookie scoop (about 3.2 Tbsp), portion out dough. Roll the top of each dough ball in the spiced sugar mixture. Place on the prepared baking sheet.
Bake: Bake for 10–12 minutes, adjusting time if making smaller cookies.
Cool: Allow cookies to cool on the baking sheet for at least 30 minutes before serving. Enjoy!
