You’ll just need 4 simple ingredients for this refreshing summertime drink:
I’m a big fan of using fruit that is in season. In-season produce is sweeter, more flavorful and is picked and harvested at its peak ripeness, which means it has more nutrition overall, If available use freshly squeezed oranges.Â
Fresh squeezed orange juice
Vanilla extract (non-alcoholic)
Club soda
Condensed coconut milk (store bought or homemade) If not dairy-free Sweetened condensed milk will work too.Â
Garnishes- Optional whipped cream and orange slices.
Grab your cup of choice and fill with freshly squeezed orange juice, and vanilla extract.
Fill 3/4 of the glass with ice and pour club soda leaving 1-2 inches of room from the top.Â
Top the remaining cup with sweetened condensed coconut milk.
Give it a stir or leave it layered and top with optional whipped cream and orange slices.Â
You can purchase sweetened condensed coconut milk already prepared or make your own from scratch. If you want a refined sugar free alternative to sweetened condensed coconut milk, then I have the perfect recipe to make at home. You’ll just need two ingredients and a saucepan to make.Â
Take a can of coconut milk and pour into sauce pan, add honey and heat over medium high heat until bubbling.
Turn heat down to a simmer, allow to simmer for 25-30 minutes or until the sauce has reduced by half. Add a pinch of salt and a dash of vanilla extract.Â
Sauce will slightly thicken, but become more thick as it cools and refrigerates.Â
Store in jar or airtight container in the refrigerator for up to 2 weeks. Use on top of ice cream, in coffee or whatever you like!
