Streusel Stuffed Baked Peaches

Juicy yellow summer ripe peaches baked with buttery crisp honey and topped with a coconut sugar pecan oat streusel you will never eat just a plain ole peach again after trying this dish. This warm oven baked stuffed peach dish is perfect for breakfast or dessert. It's like the little black dress everyone needs in their closet, but they need it for their recipe book.

I love utilizing fruit that is in season. It’s at its peak ripeness and there is nothing better than a perfectly ripe juicy peach. Peaches tend to be at their peak ripeness in August, just as summer is coming to an end. One would argue that peaches alone when in season shouldn’t be messed with and I agree to a degree. However, if you are like me and over buy fruit towards the end of the season thinking you will eat them all up before they go bad, then you know that as soon as the fruit begins to ripen you better be thinking of what to make with them. 

I recently made these for breakfast the other morning and topped them with my favorite dairy free yogurt. It not only satisfied my usual morning sweet tooth but sustained my hunger until lunch. I had so many left over, I meal prepped them in food containers and brought them to work every day for breakfast. Talk about an indulgence every day of the week. 

Streusel Stuffed Baked Peaches

What you will need for these baked stuffed peaches

  • Peaches 

  • Oatmeal

  • Walnuts or Pecans

  • Butter or Ghee

  • Honey, Coconut Sugar and Cinnamon 

  • Paleo flour mix or gluten free flour 

  • Salt

How to make streusel stuffed peaches

  1. First you will want to halve the peaches and remove the pit. You can even scoop out some of the flesh, to make more of a divot to fill with the topping, but I just make a large mound over the peach and form it like a half ball. 

  2. Make your streusel topping and overfill each peach with topping. 

  3. Bake in the oven for about 50 minutes uncovered, if you noticed the topping getting too dark you can place a piece of tinfoil over the top so that it doesn’t get burnt. 

  4. Serve with yogurt for breakfast or ice cream for dessert and enjoy!

The streusel topping for this dish comes together rather quickly (just under 5 minutes) and bakes in the oven for about an hour, but the final product makes it seem like you’ve been slaving away in the kitchen all day. This is one of those dishes, when you bake it in the oven the whole house begins to fill with the scent of fresh peach pie, warm cinnamon and sugar caramelizing as it bakes in the oven. If you were made “chief dessert bearer” for an upcoming party or gathering THIS is the one you should bring! When you get to your destination all you need to do is pop it in the oven and allow your dish to fill the air. The crunchy streusel topping pairs nicely with the soft warm gooey peaches that begin to release their pectin’s. Now top with your favorite vanilla ice cream and your guest will think you labored away all day over this dessert.

Streusel Stuffed Honey Baked Peaches

Ingredients
  

  • 3 whole Peaches medium ripe and halved
  • 1 cup Oatmeal
  • 1 tbsp Paleo flour mix or glutenfree flour
  • 1/4 cup Chopped pecans
  • 1/4 cup Walnuts
  • 1 tbsp Cinnamon powder
  • 3 tbsp Honey
  • 1 Pinch of salt
  • 3 tbsp Butter or ghee
  • 1 tbsp Coconut sugar (set aside)

Instructions
 

  • Preheat oven to 350 degrees
    Halve fresh ripened peaches and remove the pit. Use a spoon to carve out just a little more flesh from the center of the peach to form a slightly larger cavity, roughly half of a melon scoop size.
  • Mix Oatmeal, flour, nuts, salt and honey. Add butter and use fork or pastry cutter to incorporate butter into streusel mixture.
  • Fill each center of peach with streusel mixture packing down nice and firmly. Place peaches topping side up in baking dish.
  • Sprinkle with 1 tbsp coconut sugar over the top of the peaches.
  • Bake in oven for 50 minutes or until topping begins to brown. If topping becomes too brown halfway through, you can place a loose fitting tinfoil sheet over baking dish.
