Einkorn Sourdough Banana Bread

Einkorn Sourdough Banana Bread is a twist on traditional banana bread with added benefits of sourdough and Einkorn flour which brings out the nutty flavor and richness in this bread.

Ingredients
  

  • 3 Medium Ripe bananas (The riper the better) Should be about 1 1/4 cup mashed bananas or 350 grams
  • 1 cup Coconut sugar or Maple sugar 150 grams
  • 1/2 cup Melted butter 113 grams melted
  • 1/2 cup Sourdough discard 125 grams
  • 1 tsp Vanilla 13 grams
  • 2 Eggs 55 grams each without shell
  • 2 Cups Einkorn flour all purpose 240 grams
  • 1 tsp Baking soda 4 grams
  • 1/2 tsp Salt 3 grams salt

Instructions
 

  • Prep and preheat-Line a 9x5 or 8.5x4.5 loaf pan with parchment paper and preheat the oven to 350 degrees Fahrenheit.
  • Melt butter- Using a microwave, melt butter in 10-15 second increments until melted. Set aside.
  • Whisk together wet ingredients- In a stand mixer, with the whisk attachment, mash together bananas and sugar. Add in sourdough discard, vanilla extract, eggs and melted butter. Whisk until well combined.
  • Add dry ingredients- Add your dry ingredients (Einkorn flour, baking soda and salt) and mix until incorporated. Fold in optional walnuts or chocolate chips if desired.
  • Bake- Transfer batter to lined loaf pan and bake for 55-60 minutes or until a toothpick inserted comes out clean. Allow to cool for 30-60 minutes and enjoy!

Notes

Note: The weight of your discard can fluctuate based on the feeding ratio used for your starter and the timing of the last feeding. Weighing discard in grams instead of using cups provides more consistent and accurate measurements.
