Ingredients
  

  • 1/4 cup Almond flour
  • 1 tbsp Coconut flour
  • 2 tbsp Arrowroot flour/starch
  • 3/4 cup Coconut sugar
  • 1 Egg
  • 3/4 cup Almond butter (creamy) room temperature
  • 3 tbsp Molasses
  • 1/8 tsp Salt
  • 1 tsp Vanilla extract
  • 1 tsp Baking soda
  • 1/2 tsp Cinnamon
  • 1/4 tsp Cloves
  • 1/4 tsp Ginger

Instructions
 

  • Preheat oven to 350 degrees Fahrenheit. In a medium mixing bowl add coconut sugar, egg, vanilla, almond butter and molasses and blend until creamy smooth. In a separate mixing bowl add your dry ingredients and spices and stir.
  • Add your dry ingredients to your wet ingredients and mix well with electric hand mixer until sticky dough forms.
  • Line cookie sheet with parchment paper. Roll into 1 1/2 inch balls and then roll the ball into sugar (coconut or regular) if desired. Then place each ball 2-3 inches apart from each other. Bake for 8-10 minutes. The dough DOES NOT need to be refrigerated before baking and will actually cause the dough to dry out if refrigerated. I recommend baking immediately. If saving for later freeze cookies after baking them.
