These soft and chewy Paleo Ginger Molasses Cookies are the perfect cookie to bake this holiday season.  Made with healthy ingredients such as almond butter, almond flour, coconut flour and perfectly spiced with ginger, cinnamon and cloves, these make the perfect Christmas cookie and come together in as little as ten minutes.

The holiday season is a special time of year and in my house its full of baking all the classics. I love to bake cookies especially around December and I couldn’t wait to create this ginger molasses cookie and share it with all of you! There is something really special about molasses cookies, they tend to be made around December and are considered a traditional Christmas cookie. This recipe has been tested and retested more times than I would like to admit, but it was really important for me to get the right consistency of a crispy outer cookie with a soft chewy inside and I can whole heartedly say I nailed it!

This healthier version of the classic molasses cookie has all the flavors of the traditional molasses cookie; are soft and chewy on the inside, have that beautiful crackled crispy top and dusted in a sugar coating. This cookie should be on your Santa’s must bake list!

Is Molasses Paleo?

There is a lot of controversy over whether molasses is paleo or not, and I’ll give a brief rundown on what molasses is and you can decide for yourself. 

Molasses is juice extracted from sugarcane and then boiled down until the sugar crystalizes and evaporates out. The goal of boiling down the sugar cane is to remove as much sugar as possible with each successive cycle. A typical molasses with undergo 1-3 cycles, with each cycle removing more sugar and creating a molasses in varying degrees of color, sweetness and nutritional content. Blackstrap molasses is the darkest molasses and has undergone the most cycles of boiling out the sugar, it is the strongest in taste and most nutrient dense. 

For this particular recipe I used a medium dark molasses (not blackstrap), but if you are following and adhering to a strict paleo diet then the blackstrap would probably be considered the most paleo version given my research although most people consider all molasses to be paleo. Just note that blackstrap molasses is highly concentrated and will have a deep, spicy and bitter taste to it which has not been tested with these cookies. 

Tips/Tricks/ Recommendations

  • Refrigeration- Refrigerating the dough is not necessary for these cookies. They aren’t made with butter and the refrigeration will cause the dough to dry out due to the almond flour absorbing much of the liquid. Note: I recommend baking immediately upon making the dough. 

  • Overmixing- Don’t overbeat the dough with the hand-mixer. It will result in a fluffier cookie instead of the traditional chewy molasses cookie that spreads out. Just mix until well incorporated. 

  • Crinkle Cookie Top-Getting that crinkle top appearance -Rolling into a ball and then rolling in sugar (granulated, coconut or even maple sugar) and placing directly onto cookie sheet without flattening the ball will create that beautiful crinkle top we love so much! If You notice your cookies did not “crinkle” when you take them out of the oven, you can press the cookies down in the middle with your finger, or simply take the sheet pan and bang it on the counter once or twice and you will be surprised at how they magically crinkle. 

  • Freezing- We all know the holiday season can get overwhelming and we want to bake cookies early to enjoy later in the month. For this recipe I recommend Baking first then allowing the cookies to cool completely and then freezing them. These cookies are just as delicious pulled out of the freezer and one of my favorite ways to eat these is with ice cream sandwiched in the middle.

Equipment

Ingredients
  

  • 1/4 cup Almond flour
  • 1 tbsp Coconut flour
  • 2 tbsp Arrowroot flour/starch
  • 3/4 cup Coconut sugar
  • 1 Egg
  • 3/4 cup Almond butter (creamy) room temperature
  • 3 tbsp Molasses
  • 1/8 tsp Salt
  • 1 tsp Vanilla extract
  • 1 tsp Baking soda
  • 1/2 tsp Cinnamon
  • 1/4 tsp Cloves
  • 1/4 tsp Ginger

Instructions
 

  • Preheat oven to 350 degrees Fahrenheit. In a medium mixing bowl add coconut sugar, egg, vanilla, almond butter and molasses and blend until creamy smooth. In a separate mixing bowl add your dry ingredients and spices and stir.
  • Add your dry ingredients to your wet ingredients and mix well with electric hand mixer until sticky dough forms.
  • Line cookie sheet with parchment paper. Roll into 1 1/2 inch balls and then roll the ball into sugar (coconut or regular) if desired. Then place each ball 2-3 inches apart from each other. Bake for 8-10 minutes. The dough DOES NOT need to be refrigerated before baking and will actually cause the dough to dry out if refrigerated. I recommend baking immediately. If saving for later freeze cookies after baking them.
