Ingredient’s you’ll need for this einkorn flour banana bread

  • Einkorn Flour: All-purpose einkorn flour, the key here is accurate measurements! Using a food scale to measure out exact grams is best, but if you don’t have one, spoon and level the flour. 
  • Baking soda: Helps with rise.
  • Salt: Use a fine grain sea salt
  • Ripe Bananas: Choose ripe bananas with lots of brown spots for a more moist bananas bread.
  • Salted butter: I like to use salted butter, but if you don’t have salted butter add an extra 1/8 to 1/4 tsp of fine grain sea salt to the batter. 
  • Maple sugar- Maple sugar gives this banana bread the best flavor but you can also use coconut sugar which is also VERY delicious!
  • Eggs- Use large eggs.
  • Vanilla bean paste- You can also use vanilla extract.
  • Mix ins: I always love milk chocolate chips or walnuts in my banana bread.

Melt Butter

To start place your butter in a light-colored saucepan over medium heat. I prefer to use a 2qt saucepan for browning my butter.

Watch for Foaming

As the butter melts, it will begin to foam. Use a heatproof spatula to stir the butter occasionally and scrape the sides and bottom of the pan.

Golden Color and Aroma

The foam will slowly dissipate, and the butter will begin to turn golden brown. The milk solids will separate and caramelize on the bottom of the pan. Watch closely as it can burn quickly.

Remove From Heat and Cool Slightly

When it reaches a golden amber color and has a nutty aroma, remove it from the heat and pour it into a heatproof bowl to cool. You will notice little brown bits in the butter and that is normal, those little bits are caramelized milk solids.

  • Note: When replacing recipes with browned butter, allow for liquid loss. When browning butter, you will typically lose 10-20% of the water in the butter. For this reason, add 1-2 tbsp more depending on the recipe. I like the consistency of jovial einkorn flour. It typically weighs close to 120 grams per cup which makes it easy for beginners just getting started, especially if you aren’t actively using a scale to measure your flour. 

I also, am a huge fan of farm2flour brand as it is freshly milled, within 7 days of being shipped to your house, it smells and tastes amazing, and I find it to be a better bang for your buck especially because you can subscribe or buy in bulk to avoid shipping costs. The more you buy, the better the price per pound. For instance, a 5lb bag of their einkorn is $3.40 per pound, compared to $5.12 per pound for the 2lb bag. I’ve found that ordering 30lbs at a time offers the best deal with free shipping on anything over $99. 

Cooking with Einkorn flour is usually pretty straightforward, often being a 1:1 or sometimes a 1:1.25 replacement for regular all-purpose flour in most recipes, but there are some notable differences to keep in mind if your recipe isn’t producing the quality product you’d like. Einkorn flour is more dense than regular flour due to its low gluten content, it absorbs less fat and liquids than modern wheat flours and at a much slower absorption rate. The adjustment of liquid may be necessary in some recipes, especially those that require refrigeration. 

How to store einkorn banana bread

Full disclosure here, this Einkorn banana bread never last longer than a few days in our house…However it will be just perfect stored on the counter in an airtight container or Ziploc for 2 days, then I would transfer into the fridge for up to 5 days. 

You can also pre-slice the banana bread and freeze it in an airtight container or Ziploc and pull out as desired and thaw in refrigerator. 

Do I have to use brown butter?

No, You can use melted butter if you don’t have the time to brown your butter, it does lose that caramel nutty undertone, but if you want more of a classic banana bread reduce the butter from 10 tbsp to 1/2 cup melted butter.

How to prevent banana bread from browning too much

Use a light colored loaf pan: Using a light-colored loaf pan helps prevent over-browning. Dark pans absorb more heat, which can cause your banana bread to overbake on the outside before it’s fully cooked inside. I like USA Pan Loaf Pan for mine.

Einkorn flour tends to brown more quickly that regular wheat flour. If you notice it becoming a bit too dark, tent with foil the last 10-15 minutes.

Ingredients
  

  • 140g (10 tbsp) Salted butter 10 tbsp butter should equal 1/2 cup of melted browned butter. The process of browning butter causes water to evaporate losing 10-20% liquid. This recipe is adjusted to account for that loss. 140g is measured prior to browning.
  • 120g (3/4 cup) Coconut sugar or maple sugar (not syrup)
  • 350g (3 Medium) Ripe bananas mashed Should be about 1 1/4 cup mashed bananas.
  • 1 tsp Vanilla or vanilla bean paste
  • 2 Large Eggs
  • 180g (1 ½ cup) Einkorn flour all purpose
  • 3/4 tsp Baking soda
  • 1/2 tsp Salt

Instructions
 

  • Brown the butter: Add 10 tablespoons butter to a 2-quart saucepan. Cook over medium heat until melted and simmering. Stir occasionally. The milk solids will separate, sink, and begin to brown. When the butter turns a golden amber color and smells nutty, remove from heat. Transfer to a bowl and let cool. (Tip: Place in the fridge for 10 minutes if needed, but don’t let it solidify—aim for a warm/cool liquid.)
  • Prepare the pan & oven: Line a 9×5 or 8.5×4.5 loaf pan with parchment paper and preheat the oven to 350 degrees Fahrenheit.
  • Mix wet ingredients: In a bowl or stand mixture, whisk together mashed bananas, coconut sugar, vanilla, eggs and cooled brown butter. Make sure the butter isn’t hot, or it will scramble the eggs.
  • Add your dry ingredients: Add einkorn flour, baking soda and salt and mix until just incorporated. Fold in optional walnuts or chocolate chips
  • Bake: Transfer the batter to the prepared loaf pan. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool for 1 hour and enjoy!

    I’m making this banana bread recipe for the 3rd time after recently discovering einkorn flour. Before this I had a go-to recipe (with regular flour) I’ve used for over 15 (since making this recipe, I haven’t looked back!). Simple, moist and full of flavour (I’ve been adding a bit of cinnamon, nutmeg and clove as well as pecans, if I have on hand).

  3. Can you use fresh milled einkorn flour in this banana bread with no changes t the amount of flour by weight?

    1. I cant say for certain that it would work out as I have not tested it with freshly milled flour. Many people have tried my recipes with freshly milled in muffins and have had success, and banana bread tends to be more forgiving with freshly milled flour due to its moisture content. If you choose to try it, I recommend letting the batter rest for 10-15 minutes before baking to help the bran absorb the moisture. If you can sift out some of the large bran, even better.
