Sweet and Spicy Chicken Wings

If you love the spice of buffalo sauce and crispy juicy chicken, then you are going to love these oven-baked Crispy Sweet and Spicy Chicken Wings! They have just the right amount of sauce and are the perfect combination of crispy, crunchy and lightly dressed in my Maple Butter Sweet and Spicy Buffalo Sauce. This may be my favorite appetizer. These chicken wings are perfect for any occasion. Baby/bridal showers, football games, holiday parties you name it, these will be a total hit no matter when you make them. 

Juicy, crispy and tender chicken drenched in a sweet spicy buffalo sauce, these oven-baked Crispy Buffalo Chicken Wings are one of the most coveted foods in America, being served at restaurants, bars and many game-day events and special occasions. These wings are always a hit when I serve them and its really funny how excited people get about this little finger food. 

Are Buffalo Chicken Wings Gluten Free?

This recipe is gluten free and technically I consider these to be paleo as well. This recipe uses a secret ingredient that you probably already have on hand with minimal effort and no extra kitchen gadgets or mess to clean up after. So, what is this special ingredient? Baking powder. The use of baking powder is what makes this chicken crisp up like it’s been fried in oil. Be sure to use baking powder, NOT baking soda. Another very important **pro tip here is to switch over to aluminum free baking powder if you haven’t already. Aluminum in baking powder can offer a bitter taste to your recipes and some people are especially sensitive to aluminum in baking powder, but also you really don’t want to be ingesting those heavy metals. 

Ingredients Needed

  1. Chicken Wings

  2. Baking Powder

  3. Seasonings

  4. Maple Syrup

  5. Butter

  6. Hot Sauce (Franks Red Hot)

Step-by-step Instructions/How to Make

Step 1. Pat your chicken dry with a paper towel, then toss your wings into the seasoning mixture and evenly coat each piece of chicken. The baking powder along with the method of cooking allows these wings to get extra crunchy without the heaviness of deep-fried food so make sure to get that seasoning in all the crevasses.

Step 2. Evenly space the chicken wings on a parchment lined baking sheet and wire rack placed on top. (Note: I forgot to add the parchment paper in my picture). This process of cooking is like your own air fryer for the oven. It allows the heat to get in between every nook and cranny of the chicken in order to crisp it up like it’s been deep fried in a vat of oil. You also do not need a convection oven to make these, although they will cook faster if you do choose to use the convection.

Step 3. Bake in the oven at 375 for 45-60 minutes, turning once about halfway through. While the wings are cooking, you can prepare your 3-ingredient sauce. Once the wings are out of the oven, simply transfer to mixing bowl and evenly coat with your buffalo sauce. Serve immediately on a platter with primal kitchen ranch sauce (to keep them paleo) or eat without a dipping sauce (which is how I prefer to eat mine). 

Tip for making Crispy Buffalo Chicken Wings

1. Use of baking powder to keep these chicken wings crispy without frying them is key here. 

2. Another tip- One of the tricks to keeping these chicken wings crispy is coating them with the sauce at the end. A lot of recipes call for coating halfway through the baking process which actually causes them to get soggy.

Buffalo Chicken Wings

Equipment

  • Sheet tray
  • wire rack
  • Sauce pan
  • mixing bowl

Ingredients
  

  • 1.5 lbs Chicken wings about 12
  • 2 tbsp baking powder
  • 1/4 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Garlic powder
  • 1 tsp Paprika
  • 1/2 tsp Chili powder

Buffalo Sauce

  • 1/4 cup Grass fed butter
  • 2 tbsp Franks red hot sauce
  • 1 tsp Maple syrup

Instructions
 

  • Preheat oven to 375 degrees. Line baking tray with parchment paper and wire rack. Set aside.
  • In a large bowl add dry seasonings and baking powder. Set aside.
  • Pat dry chicken with a paper towel. Place chicken in the bowl with seasoning and toss and coat chicken it is helpful to press seasoning into chicken and ensure each nook and cranny is seasoned evenly.
  • Line chicken on the wire rack baking tray.
  • Place in oven and bake for 45-55 min, turning once about halfway through.
  • While the chicken is cooking in the oven, use a saucepan over medium low heat, add butter, hot sauce and maple syrup. Once melted, set aside until chicken is completed.
  • Once the chicken is crispy and done, place chicken in a bowl and pour sauce over top. mixing until well coated. Serve as is, or with a dipping sauce of choice.
