Greek Chicken Gyros

Loaded with flavors in every bite, this traditional Greek style street food is mouthwatering delicious and so simple it can be whipped up in under 30 minutes! The chicken is marinated in a combination of dried herbs, lemon juice, oil and fresh dill, then grilled for a nice juicy char. The gyros are topped with a creamy cucumber dill tzatziki, fresh crisp veggies all served in a warm homemade Einkorn Flour Tortilla and topped with fresh feta cheese. 

Ingredients To Make Greek Chicken Gyros

Chicken- Boneless skinless chicken breast cut into 1 inch cubes.

Seasoning- A combination of dried herbs, fresh dill, lemon juice and avocado oil to marinate the chicken for the most flavorful souvlaki chicken. 

Salad- Cucumbers, tomatoes, red onion, fresh dill and feta cheese. 

Tzatziki sauce-Greek yogurt, lemon juice, garlic, cucumbers, salt and fresh dill.

Gyros- Homemade Einkorn Flour Tortillas using a simple flour, salt and water recipe or you can purchase prepared store-bought gyros. 

What is Souvlaki Chicken?

Souvlaki stands for “Meat-on-a-skewer” and is a very popular street food in Greece. Souvlaki is a very well-seasoned meat, marinated for hours or overnight, then threaded onto a skewer and cooked on the grill. 

How do you make souvlaki chicken skewers?

My Greek Chicken Souvlaki marinade is made with a combination of dried herbs, fresh dill, lemon juice, and avocado oil, then marinated for the juiciest most flavorful chicken. 

  1. Dice chicken into one-inch cubes and place into bowl or gallon size Ziploc bag. 

  2. Add marinade ingredients into bowl, toss the chicken to coat with marinade and place in refrigerator to marinate for 15 minutes or overnight. 

  3. After marinating, thread chicken onto skewers and grill over medium high heat for 2-3 minutes each side, allowing the chicken to develop color and a slight char. (You can also skip the skewers and just cook these in a cast iron skillet on the stove).

  4. Rest your chicken and Assemble Gyros! 

How Do You Make Homemade Tzatziki Sauce For Greek Chicken Gyros?

  1. Using a cheese grater shred 1.5 cups cucumbers and squeeze out any excess liquid with a paper towel. Place in bowl. 

  2. Add full-fat Greek yogurt, lemon juice, salt and fresh chopped dill. Stir until well combined. 

  3. Place into the refrigerator until ready to use.

Tips and Suggestions for The Best Greek Chicken Gyros

  1. Use a full fat Greek yogurt- Make sure you choose a full fat Greek yogurt for your tzatziki, low fat will cause your dressing to become watery. 

  2. Squeeze excess juice out of cucumbers- This will prevent a watery Tzatziki, as cucumbers hold A LOT of moisture. 

  3. Overnight marinade- The best part about this Greek chicken marinade is it can be marinated in under 15 minutes or overnight. Simply add all your marinade ingredients to a bowl or gallon size ziploc and toss with your chicken and place in the refrigerator until ready to use. 

How to Make Einkorn Flour Tortillas

This is a simple recipe, which uses flour, salt, water, tapioca flour and oil. You form it into a large dough ball then divide it into smaller balls. Ingredients
  

Chicken Souvlaki Marinade

  • 1-1.5 lbs Boneless skinless chicken breast cut into 1 inch cubes
  • 2 tbsp Avocado oil
  • 2 tsp Fresh lemon juice (about half of a large lemon)
  • 1 tbsp Fresh dill finely chopped
  • 1 tsp Salt
  • 1 tsp Oregano dried
  • 1 tsp Parsley dried
  • 1 tsp Black Pepper
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Thyme dried

Tzatziki sauce

  • 1 cup Greek yogurt plain
  • 1 cup Grated cucumbers liquid squeezed out
  • 1 tsp Fresh minced garlic
  • 2 tsp Lemon juice
  • 1-2 tbsp Fresh dill finely chopped
  • 1 pinch Salt to taste

Toppings/Salad

  • 1 Cucumbers diced
  • 1 Tomatoes diced
  • 1/4 cup Feta crumbled
  • 1/2 Red onion sliced
  • 1 tbsp Fresh dill chopped

Instructions
 

Einkorn Flour Tortilla

  • If making Homemade Einkorn Flour Tortillas, see notes for recipe.

Chicken Souvlaki Marinade

  • Dice chicken into one-inch cubes. Place chicken in large gallon sized bag or large bowl and add all marinade ingredients to bag/bowl. Toss chicken to coat and refrigerate for a minimum 15 minutes or overnight.
  • Once chicken is marinated, thread the chicken onto your skewers. Using a grill pan over medium high heat place skewers down turning every couple minutes allowing the chicken to cook completely and develop nice color and a slight char. This will take about 10-12 minutes. You can also skip the skewers and just pan sear the chicken.
  • Once chicken is cooked, remove from grill and allow chicken to rest for 5 minutes.

Tzatziki sauce

  • Take 1 large cucumber and grate it by hand until you have a little more than 1 cup. Squeeze out as much liquid as you can and place in a bowl.
  • To the bowl with cucumber add remaining Tzatziki sauce ingredients. Give it a stir, and place in refrigerator until ready to use.

Assemble Gyros

  • Grab your gyro and add warm chicken, cucumbers, red onion, tomato, feta, and dill. Slather with a healthy portion of fresh tzatziki wrap or fold your gyro and enjoy!
