Apple and Poppyseed Coleslaw

Poppyseed and Apple Coleslaw is a delightful twist on the classic coleslaw recipe. Unlike traditional coleslaw, this version does not rely on mayo as a dressing, making it a refreshing and healthier option. The combination of crunchy cabbage, sweet apples, and nutty poppyseeds creates a harmonious blend of flavors and textures. This coleslaw is the perfect accompaniment to pulled pork dishes or sandwiches, adding a burst of freshness and tanginess to every bite.

Ingredients you will need for this Apple and poppyseed coleslaw

  • Cabbage- Purple and green Shredded

  • Carrots –Julienned

  • Granny smith apple- Julienned

  • Yogurt-Greek works best but I’ve also used Grass fed yogurt. 

  • Avocado oil

  • Lemon juice-freshly squeezed 

  • Honey

  • Apple Cider Vinegar 

  • Dijon Mustard

  • Salt

  • Garlic powder 

How to make

  • Shred Coleslaw ingredients- Shred green and purple cabbage, julienne carrots and apple. Transfer to a larger bowl. 

  • Prep dressing- In a bowl, whisk together dressing ingredients. 

  • Combine and Chill- Combine dressing with coleslaw and toss to coat. Cover and chill for 1 hour prior to serving.

Ingredients
  

Poppyseed Dressing

  • 1 cup Yogurt (Greek or grass fed)
  • 2 tbsp Avocado oil
  • 2 tbsp lemon juice About 1 whole lemon
  • 2 tbsp Honey
  • 1 tbsp Dijon mustard
  • 1 tsp Apple cider vinegar
  • 1/2 tbsp Poppyseeds
  • 1 tsp Garlic powder
  • 1/2 tsp Salt

coleslaw

  • 2 cups Green Cabbage shredded
  • 3/4 cup Red cabbage shredded
  • 1/2 cup Shredded or julienned carrots
  • 1/2 cup Julienned granny smith apple

Instructions
 

  • In a bowl or measuring cup, add all poppyseed dressing ingredients. Whisk together until well combined. Set aside.
  • In a large bowl, combine green and red cabbage, apple and carrot.
  • Pour poppyseed dressing over cabbage slaw mixture and toss until well combined.
  • Cover and place in refrigerator for 1 hour or until ready to serve
