
This easy, moist einkorn banana bread strikes the perfect balance between rich banana sweetness and warm, caramel-nutty undertones. Ripe Bananas- The riper the better
Coconut sugar
Browned butter
Vanilla Extract
Eggs
Einkorn Flour
Salt
Baking soda

Browned butter is a delicious and versatile ingredient that adds nutty, caramel undertones to dishes. Making browned butter is a simple process but requires close attention to prevent burning. To start place your butter in a light-colored saucepan over medium heat. I prefer to use a 2qt saucepan for browning my butter.
As the butter melts, it will begin to foam. Use a heatproof spatula to stir the butter occasionally and scrape the sides and bottom of the pan.
The foam will slowly dissipate, and the butter will begin to turn golden brown. The milk solids will separate and caramelize on the bottom of the pan. Watch closely as it can burn quickly.
When it reaches a golden amber color and has a nutty aroma, remove it from the heat and pour it into a heatproof bowl to cool. You will notice little brown bits in the butter and that is normal, those little bits are caramelized milk solids.
Note: When replacing recipes with browned butter, allow for liquid loss. When browning butter, you will typically lose 10-20% of the water in the butter. For this reason, add 1-2 tbsp more depending on the recipe. For this recipe, Browned Butter Einkorn Banana Bread, I have already accounted for the loss in water.
For a beautiful bakery-style split down the center, place a thin 1x1 sliver of butter right across the top of the batter before baking. As it melts, it creates that perfect, iconic crack. You can do this with any quick bread recipe!
Preheat oven fully: Always allow your oven to preheat fully before placing your loaf inside. A properly heated oven ensures even baking and helps prevent your banana bread from collapsing in the center.
Choose very ripe bananas- Make sure your bananas are very ripe, with lots of brown spots. The riper the banana, the more moisture and natural sweetness it adds to your bread, resulting in a moist, flavorful loaf.
Add nut or chocolate chips- For texture and added sweetness add nuts or chocolate chips which pair well with this brown butter banana bread.
Use a light colored loaf pan: Using a light-colored loaf pan helps prevent over-browning. Dark pans absorb more heat, which can cause your banana bread to overbake on the outside before it’s fully cooked inside.
Full disclosure here, this Einkorn banana bread never last longer than a few days in our house…However it will be just perfect stored on the counter in an airtight container or Ziploc for 2 days, then I would transfer into the fridge for up to 5 days.
You can also pre-slice the banana bread and freeze it in an airtight container or Ziploc and pull out as desired and thaw in refrigerator.

I’m making this banana bread recipe for the 3rd time after recently discovering einkorn flour. Before this I had a go-to recipe (with regular flour) I’ve used for over 15 (since making this recipe, I haven’t looked back!). Simple, moist and full of flavour (I’ve been adding a bit of cinnamon, nutmeg and clove as well as pecans, if I have on hand).
