One of my absolute favorite things about sourdough baking is finding creative ways to use up that precious discard! It feels so good to minimize waste and turn something that would otherwise be tossed into a delicious treat. If you’re like me and love exploring the possibilities of einkorn sourdough discard, you’re in luck! I’ve developed a few recipes that I think you’ll really enjoy.
First up, there’s my Einkorn Sourdough Banana Bread. It’s incredibly moist and flavorful, and the subtle tang from the sourdough really elevates the classic banana bread experience. It’s perfect for a cozy breakfast or a mid-afternoon snack. Then, for those moments when you’re craving something crispy and savory, my Einkorn Sourdough Discard Crackers are a must-try. They’re wonderfully versatile, and you can customize them with your favorite herbs and spices. And of course, who can resist a good cookie? My Einkorn Sourdough Sugar Cookies are a delightful treat, with a slightly chewy texture and a hint of sourdough that adds a unique twist to a classic favorite.

Maple sugar- For a slightly sweet muffin- with that maple blueberry pancake flavor. Option to substitute granulated sugar in replace of maple sugar, for a slightly sweeter muffin, but avoid coconut sugar-leaves an off-putting taste.Â
Avocado oil & Butter- Keeps these muffins moist for longer, and butter adds more flavor
Milk- 2% or whole milk.
Sour cream- Adds moisture
Sourdough discard- Preferably discarded within a week or two max.Â
Eggs- Gives these muffins structure.
Einkorn flour- All-purpose einkorn flour for these muffins.Â
Baking powder
Baking soda
Salt
Frozen blueberries- Can also use fresh.
Mixing Matters-Â Gradually add the wet ingredients to the dry ingredients, stirring just until combined. Be careful not to overmix, as this can result in tough muffins.
Leavening Power-Â old/expired baking powder won’t be as effective as fresh. These are responsible for the rise so make sure they are not expired. Each recipe is designed to be made with the right amount of leavening agent. Don’t skip or substitute baking powder or soda amounts.Â
Use Oil- Oil helps to create a tender crumb structure and keeps the muffins moist and tender for much longer.Â
Oven Temperature/Stability-Â Preheat oven well before baking your Einkorn muffins and be sure not to open the door during the baking process. A sudden drop in temperature can affect the rise.Â
For Taller Muffins-To achieve taller, more dome-shaped muffins, try this simple trick: This method allows air to circulate more evenly. Â
Alternate Filling: Fill only every other cup in your muffin tin with batter.
Bake: Bake as directed and at a higher temperature such as 375 degrees Fahrenheit.Â
Einkorn flour- Follow the recipes directions, freshly milled flour will weigh differently than store bought commercial einkorn flour. One cup of einkorn should equal to 120 grams. Weighing your flour and ingredients will result in more consistent baking.Â
