A simple way to use einkorn berries: This recipe turns whole einkorn berries into a familiar, family-friendly dish full of whole grains and high protein.
One of my favorite ways to use einkorn is in its whole berry form. While einkorn flour is wonderful for baking, the whole grain itself is just as versatile and even more nutrient-dense. Because the bran, germ, and endosperm are all intact, einkorn berries are naturally higher in fiber, protein, vitamins, and minerals than refined grains. They digest more slowly, helping you feel fuller longer and giving you more sustained energy.
When cooked, einkorn berries become tender with a slightly chewy, nutty texture—similar to farro or barley—which makes them perfect for savory dishes like my Einkorn Salad with Lemon Herb Dressing or my Homemade Einkorn Granola with Oats, Nuts and Seeds. Einkorn berries are also very forgiving to cook and don’t turn mushy as easily as rice, making them an easy, wholesome swap that turns simple meals into something more satisfying and balanced.
Einkorn wheat berries
White rice (jasmine or long grain)
Avocado oil (or preferred cooking oil)
Butter
Eggs
Onion, diced
Garlic, minced
Grated Ginger
Frozen peas and carrots (or mixed vegetables)
Coconut aminos or Tamari soy sauce
Sea salt to taste
Black pepper
Green onions, sliced
Use cold grains: Cook the einkorn berries and rice the day before and let them cool completely. Freshly cooked grains hold more moisture and can turn sticky in the pan. Cold, dry grains fry up with the best texture.
Don’t overcrowd the pan: Cook in batches if needed so everything has space to sauté instead of steam. A wok is ideal because it has plenty of surface area—simply push the cooked ingredients to one side while you continue cooking the others.
Prepare the Einkorn berries and rice according to the package instructions. Allow to completely cool. Heat 1 tablespoon of oil in a wok over medium heat and sauté the onions until they are soft and translucent. Add the garlic and cook just until fragrant.
Add diced carrots and cook for 2–3 minutes, stirring occasionally. Stir in frozen peas and cook until heated through, about 1–2 minutes.
Add 1 tbsp butter and pour in the lightly beaten eggs. Scramble the eggs gently until cooked through, Set aside. *If preferred cook in the wok, by pushing the veggies to one side and cooking the eggs on the other.
Push veggies to one side, add remaining oil and then the cooled einkorn berries and cooled Jasmine rice to the skillet. Fry the rice for 1-2 minutes, on medium high heat, then add coconut aminos, butter and black pepper. Toss everything together over medium heat until well combined and heated through.
Stir in 1–2 cups cooked BBQ pork, chicken or shrimp and eggs tossing until evenly incorporated. Taste and adjust with salt if needed. Then add garnishes and serve.
Absolutely. Just replace the white rice with all einkorn wheat berries.
Start by rinsing your einkorn berries under cold water to remove any dust.
To cook, combine 1 part einkorn berries with 2–3 parts water or broth in a saucepan. Bring to a boil, then cover and reduce the heat to a simmer. Cook for 30–35 minutes, or until the berries are tender but still slightly chewy. Drain any excess water and let them cool.
One of the best things about einkorn berries is that they’re very forgiving. Unlike rice, opening the pot early won’t ruin the texture. If the grains seem a little dry while cooking, just add a bit more water and continue simmering until done.
No, you need to cook these separate. They both have different cook times as well as amounts of liquid.
For the best fried rice, I recommend cooking your einkorn berries a day in advance and refrigerating them. This helps any excess liquid drain off and gives you a firmer, more separated grain—perfect for stir-frying. That said, I’ve also made fried rice the same day with freshly cooked, warm einkorn berries, and it still turned out great. It just might be slightly stickier than the day-old version.
