Homemade Crescent Einkorn Dinner Rolls

They are made with organic all-purpose einkorn flour, milk, eggs, sugar, salt, butter, and yeast. The dough is rolled out into a circle, brushed with softened butter, and cut into pie-shaped pieces. Each piece is then rolled up into a crescent shape similar looking to a croissant and then baked until golden brown. The result is a flaky and tender pastry roll that is perfect for any occasion.

Tips for baking with einkorn flour

When it comes to baking with einkorn flour, there are a few essential tips and tricks to keep in mind as they can have a major impact on the final texture and flavor of your bread. Whether you’re an experienced baker or just starting out, mastering the art of einkorn flour can take your bread-making skills to the next level and bring a new level of flavor and nutrition to your favorite recipes.

  • Einkorn flour can typically be substituted cup for cup with regular flour in most recipes, however the liquid may sometimes need to be reduced by 15-20% in some recipes. 

  • Einkorn flour takes longer to absorb liquid, in some instances the dough may need to rest before adding in more flour. 

  • It is important to be mindful of how long you knead your einkorn bread dough. Overworking the dough can negatively impact the gluten development, which is not as crucial a factor as with regular flour. Generally, einkorn breads do not require extensive kneading for this reason. That being said, a brief knead can help with the shaping of the bread and result in a more supple dough.

  • To prevent deflation, limit second rise to 40-50%. Be cautious and avoid over-proofing dough, especially for recipes requiring a second rise.

Storing/Reheating/Freezing- Einkorn dinner rolls

Storing- Once cooled completely I like to store mine in a plastic bag in the refrigerator. These einkorn rolls will stay fresh for 2-3 days. 

Reheating- From refrigerator, reheat in microwave for 10-15 seconds or in a warm 250-degree oven for 5-7 minutes. 

Freezing- Make these rolls up until the point of rolling them in crescent shapes. Once in crescent shapes, line them on a sheet pan and place them in the freezer until frozen. Once they have frozen transfer to freezer safe storage bag where they will stay good for up to 3 months. When you’re ready to bake the einkorn dinner rolls, pull them out of the freezer, line them on a parchment lined baking sheet, cover with a towel and allow them to rise for 1-2 hours.

NOTE: do not allow them to double in size only allow about a 40-50% rise from frozen. You do not want to overproof them, otherwise they will deflate in the oven and become dense. Bake as directed and enjoy freshly baked soft buttery einkorn dinner rolls at any time!

Ingredients
  

  • 1/2 cup Warm water 110-115 degrees
  • 1 tbsp Instant dry yeast Fast acting
  • 1/4 cup + 1 tbsp Granulated sugar
  • 2 large Eggs room temperature
  • 1 cup Warm milk 90-100 degrees
  • 4.5-5.5 cups Einkorn flour all purpose
  • 2 tsp Salt
  • 1/2 cup Butter softened
  • 2-4 tbsp Softened butter for spreading on dough

Instructions
 

  • Combine yeast, 1 tbsp sugar and warm water to a bowl and let dissolve. Allow to bubble and activate for about 5 minutes. You will notice the yeast will become foamy/bubbly.
  • In a separate bowl, whisk together warm milk and room temperature eggs.
  • Using a stand mixer with the dough hook attachment, add your yeast mixture, plus the remaining 1/4 cup of sugar and the whisked milk & eggs. Mix until combined.
  • Add 2 cups of flour to start off with. Slowly add 1/4 cup flour at a time until you reach 3.5 cups. Now add 1/2 cup of softened butter and mix until incorporated. Keep adding 1/4 cup flour until dough forms into ball. The dough should be sticky, but not stick to fingers.
  • Transfer dough onto lightly floured surface and knead for 1-2 minutes until the dough is soft and supple. (don't over knead the einkorn dough)
  • Lightly grease a bowl with oil and transfer dough into the bowl. Cover with saran wrap and dish towel. Allow to rise in a warm area of your kitchen until your dough has doubled. Roughly 2 hours for instant yeast, longer for regular.
  • Once doubled, punch down the dough. Split the dough into equal sized balls. Roll one dough ball out to about 15-16 inches in diameter. Brush the dough with 2 tbsp softened butter and cut into triangles. 12 total.
  • Roll each slice of dough from the outer triangle portion to the inner to form a crescent shape. Repeat this process with the other dough ball.
  • Lay rolls on parchment lined baking tray. Cover will a dish towel and allow to rise for about 1 hour or until they rise roughly 40-50%, do not allow the dough to double or over proof.
  • Bake in 350-degree oven for 15 minutes or until golden brown. Brush with melted butter if desired.
