Peanut Butter – Creamy all-natural peanut butter, I prefer Costco’s organic peanut butter which contains only peanuts and salt.
Maple Syrup- for sweetness.
Protein Powder- I prefer Flav City’s Vanilla Cream, if you choose a different brand, go by weight in grams vs scoops.
Brewer’s yeast–Brewers yeast adds vitamins and minerals also helpful for lactation purposes. This adds a nutty almost savory note. It’s very subtle, but you do need to purchase the debittered version, which is linked above.
Oat flour- You can buy this, or you can blend oats up in a blender until powdery and fine.
Chocolate chips- I use a milk chocolate chip, but you can use whatever brand is your favorite.
Avocado oil- This helps thin out the chocolate sauce, I recommend avocado oil because it doesn’t have a strong flavor like olive oil or coconut oil.
Consistency- The dough should have a texture similar to freshly opened playdough. If it’s too wet, add another scoop of oat flour. If it’s too dry and crumbly, add a little more peanut butter or maple syrup.
Room Temperature PB- Use a freshly opened room temperature peanut butter, which will help with the consistency and texture of these PB cups be sure to mix and thoroughly combine the oil with the peanuts prior to measuring your pb.
Keep Refrigerated- Keep these cups cold and in the fridge in an airtight container for up to 5 days or freeze for up to 1 month.
Combine peanut butter, maple syrup, protein powder, brewers yeast and oat flour to a bowl. Mix until well incorporated.
Divide evenly between a 12 cup muffin tin. Gently press down with the back or a spoon or your fingers.
Using a double boiler method, melt chocolate chips and avocado oil until melted. Spoon about 1/2 tbsp of chocolate sauce into each muffin tin.
Place peanuts on top of the melted chocolate and place muffin tin in refrigerator for 1 hour or until chocolate is set. Then transfer to airtight container and keep in the fridge for up to 5 days or freezer for 1 month.
