Nourishing Paleo Banana Pudding

This Paleo Banana Pudding is creamy smooth, packed full of REAL banana flavor, and made with 100% grass fed beef gelatin that is rich in collagen and amino acids. This recipe is simple, delicious and is easily customizable. Made dairy free, refined sugar free, and with only 5 simple ingredients you really can't go wrong with making this for an easy quick and refreshing dessert that is good for you too.

What makes this recipe so great is there is no heating the mixture to dissolve the gelatin. You simply toss everything into a blender or food processor blend and refrigerate for an hour! The use of grass-fed beef gelatin is what makes this recipe congeal and thicken into the perfect pudding consistency. Grass fed gelatin is particularly beneficial for individuals following diets that support gut health, like GAPS, AIP and SCD. When looking for a beef gelatin you want to use one that is 100% grass fed or make sure the supplemental feed, they use for their livestock organic and absent of GMO’s, corn, soy etc. You can find my favorite Beef gelatin here which is sourced in the USA and is 100% grass-fed beef gelatin. Beef gelatin can help ease digestion, strengthen joints and bones and improve the health of skin, hair and nails.

Ingredients You'll Need

  • Grass-fed beef gelatin

  • Coconut cream

  • Medium ripe bananas

  • Vanilla extract

  • Maple syrup

Tips/Suggestions

Choosing the right milk- Coconut and banana go incredibly well together and because of that I chose coconut cream because it is slightly sweet and yields the richest and most velvety texture for pudding. You could also use Almond milk, just make sure it’s a milk that has a high fat content. 

How do I get my pudding to be yellow? If you’re looking for a more robust yellow color similar to what you get out of a boxed Jell-O instant pudding mix, there is an easy trick that has anti-inflammatory benefits too! Simply add turmeric (about 1/8 tsp) you won’t notice a taste difference, but you will get a beautiful shade of yellow. 

What to serve with pudding-Now if you are looking for the perfect wafer or vessel to go along with this dessert, look no further, simple mills honey thins just came out with this perfect sweet honey cinnamon thins that are to die for! Bananas- You want ripe bananas in the pudding and green bananas for your decor. When assembling your pudding in jars or bowls, it is recommended to use slightly green bananas, they tend to hold up better and look more appetizing. For the base, ripe is the way to go, because they are sweeter and will yield a more banana flavor profile. 

Can I make this in advance? It is best served the day of, due to the bananas changing color and getting browned. If you are making these for guests, I would recommend making them 2-4 hours in advance, so they have time to chill and thicken. Bananas won’t begin to brown until around 24 hours after making.

Equipment

  • Bowl
  • Food processor or blender

Ingredients
  

  • 1 tbsp Grass-fed beef gelatin
  • 1 can Full fat coconut cream
  • 3 Medium ripe bananas
  • 1 tsp Vanilla extract
  • 3 tbsp Maple syrup

Instructions
 

  • Using a food processor or blender, add all ingredients in and blend for 1 minute or until well combined.
  • Empty ingredients from food processor into large bowl and refrigerate for a minimum of 1 hour.
  • Pour into glass and serve with paleo graham crackers and fresh sliced bananas. The bananas in the pudding will begin to brown after 24-48 hours so it is advised if serving for a crowd to make the same day 2-3 hours in advance.
