An easy, high-protein recipe that works for breakfast, lunch, dinner, or even brunch, this baked cottage cheese toast is one you’ll want to keep on repeat. It’s like a fun twist on quiche, with all the cozy flavor of a creamy egg-and-cheese filling baked right onto crispy sourdough toast.
Made with cottage cheese, eggs, and melty cheese, this savory toast is surprisingly filling while still being simple to prepare. Just mix the creamy filling, spread it onto sourdough, and bake until golden for a satisfying meal with a perfectly crisp bottom and soft, cheesy topping.
We make it all the time in our house, and while some might think of it as a cottage cheese breakfast recipe, I usually serve it as a side with dinner. It pairs perfectly with Italian favorites like spaghetti and meatballs, alongside my Einkorn Mediterranean Herb Salad or served with a cozy bowl of Hearty Beef and Vegetable Stew. It’s also just as delicious as the main star of the meal with a fresh spring salad too.
I love how versatile this baked cottage cheese toast is, you can truly customize toppings however you like and since it’s packed with protein, it keeps everyone full and satisfied long after dinner.

Step-By-Step How to Make Baked Cottage Cheese Toast
Combine Filling ingredients
To a bowl add cottage cheese, egg, cheddar, garlic powder, onion powder, salt and pepper. Mix until well combined
Spread Filling and Bake
Preheat the oven to 350°F. Lightly brush both sides of the sourdough slices with avocado oil or melted butter. Evenly spread the cottage cheese filling over the tops of the bread and place the slices on a baking sheet.
Bake for 20–25 minutes, or until the tops are golden brown and the centers are set, similar to a quiche. If the filling is set but you’d like the tops more browned, broil for 1 minute, watching closely to prevent burning.
Cottage Cheese Toast Variations
FAQ’s
Can I use any type of bread for baked cottage cheese toast?
Yes! Sourdough works best because it gets crispy and holds up well, but you can also use whole wheat, country bread, or any sturdy slice of bread you like.
Is cottage cheese toast good for breakfast or dinner?
Both! While many people think of it as a cottage cheese breakfast recipe, it also works really well as a savory side for dinner or even a light meal with a salad.
Can I make this ahead of time?
It’s best enjoyed fresh, but you can mix the cottage cheese and egg filling ahead of time and store it in the fridge for up to 24 hours before baking. Assemble right before baking so the bread doesn’t get soggy.
Can I add extra ingredients?
Absolutely. You can mix in chopped spinach, cooked bacon, herbs, or even different cheeses to customize your baked cottage cheese toast. This is very similar to a quiche filling so feel free to jazz it up how you like.
How do I store and reheat leftovers?
Once the baked cottage cheese toast has completely cooled, you can transfer it to a Ziploc bag or airtight container and store it in the refrigerator for 2–3 days.
When you’re ready to reheat, I recommend using a toaster oven or regular oven at 350°F for 7-10 minutes. This brings back that crispy toast base and keeps the egg-and-cheese topping warm and creamy without drying it out.
It’s also perfect for meal prep—I love packing any leftovers for work so I can enjoy a quick, high-protein cottage cheese toast later in the day.
