Thai Peanut Dressing

Nothing beats a perfectly balanced dressing, from creamy peanut butter to fresh ginger, garlic and lime juice, this simple, creamy and deliciously addicting Ginger lime Peanut Sauce is the perfect dressing on salads, as a dipping sauce or basically drizzled over anything. This vegan peanut sauce is packed with protein and healthy fats from the peanut butter, plus the bright flavors of ginger and lime, this sauce is not only delicious but it’s good for you too!  

Ingredients you will need

  • Coconut Aminos

  • Peanut Butter (creamy)

  • Ginger

  • Garlic

  • Rice vinegar

  • Maple syrup or Honey

  • Toasted sesame oil

  • Freshly squeezed lime juice

How to make Thai inspired ginger lime peanut sauce

Add all ingredients into a blender and blend for 30 seconds until creamy smooth. I prefer to use a blender as I find it makes the Thai Peanut Dressing much creamier and smooth, but you can also use a bowl and whisk until well combined and creamy. 

This dressing has the perfect mix of creamy peanut butter, acid and fat to balance out and make this dressing a major flavor bomb. I love to serve this with my Vietnamese chicken salad or as a dipping sauce with my Sesame Ginger Chicken. 

How to Store Thai peanut dressing

This sauce will stay good in the refrigerator for up to 1 week. Store in a jar with lid. Shake vigorously before using.  

Substitutions

  • You can substitute tahini instead of peanut butter, which would make this sauce paleo friendly.

  • You can also chop up peanuts or finely chopped cilantro and mix that into the dressing as well for some freshness.

Ingredients
  

  • 1/4 cup Coconut aminos
  • 2 tbsp Rice vinegar
  • 1 tbsp Toasted sesame oil
  • 1 tbsp Maple syrup
  • 2 tbsp Peanut butter
  • 1 tsp Ginger freshly grated
  • 1 tsp Garlic minced
  • 1 tsp Lime freshly squeezed

Instructions
 

  • Add everything into a blender and blend until creamy smooth 30-60 seconds. Blending creates a creamier dressing and is recommended for this recipe, but you can also whisk the ingredients in a bowl or wide neck mason jar. Store in refrigerator until ready to use.
